Pineapple Upside-Down Ham Loaf - cooking recipe

Ingredients
    1/4 c. firmly packed brown sugar
    1 tsp. dry mustard
    3 tsp. vinegar
    3 slices canned pineapple, drained
    3 maraschino cherries
    2 c. ground ham
    1 c. ground lean pork
    2 eggs, slightly beaten
    1 c. milk
    1 c. cracker crumbs
    1/4 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. minced onion
Preparation
    Combine brown sugar, mustard and vinegar.
    Blend until smooth. Pour into a 9 x 5 x 3-inch loaf pan.
    Place pineapple slices in a row in brown sugar mixture.
    Put a cherry in center of each. Combine remaining ingredients and spoon on top of pineapple slices.
    Bake at 350\u00b0 for 1 1/2 hours.
    Let stand 5 minutes; drain off excess drippings.
    Invert onto service platter.
    Serves about 8.
