Sausage Brunch Casserole #3 - cooking recipe

1 lb. Italian sausage
2 to 3 green onions
1 small jar pimento
9 oz. Green Giant chopped spinach, thawed and drained
1 c. flour
1/4 c. grated Parmesan cheese
1/2 tsp. salt
1 tsp. basil
8 eggs
2 c. milk
4 oz. Provolone cheese, grated
Preparation

Brown sausage and onions; drain.
Mix flour, Parmesan, salt and basil in a small bowl.
Mix eggs and milk in the blender.
Add flour mixture to egg mixture and blend well in blender.
Spray 13 x 9-inch pan with Pam.
Place sausage in pan and put half of pimento on top.
Top with all of the spinach.
Pour the egg mixture on top. Sprinkle top with Provolone cheese and pimento.
Bake at 425\u00b0 for 20 to 25 minutes (if glass, bake at 400\u00b0).
