Grilled Vegetables - cooking recipe

Ingredients
    2 Tbsp. margarine or butter
    1 medium zucchini, sliced
    1 medium squash, sliced
    2 c. sliced fresh mushrooms
    1/2 green bell pepper, cut into strips
    1 tsp. ground cumin
    1/2 tsp. salt
    1/4 tsp. black pepper
    1 c. finely chopped tomato
    1/4 c. chopped green onion
Preparation
    Melt margarine or butter in a large heavy skillet with heat-proof handle on grid over medium coals.
    Add zucchini, squash, mushrooms, bell pepper, cumin, salt and black pepper.
    Cook 4 to 5 minutes or until vegetables are crisp-tender, stirring occasionally.
    Add tomato and green onion.
    Continue to cook and stir for 1 minute.
    Makes 6 servings.
