Summer Lime Chicken Breasts - cooking recipe

Ingredients
    4 (1/2 lb.) boneless chicken breasts
    1/3 c. olive oil
    juice from 3 limes
    4 cloves garlic, peeled and minced
    3 Tbsp. fresh cilantro, chopped
    1/2 tsp. salt and fresh pepper
    red and yellow peppers, roasted
Preparation
    Trim fat and pound breasts.
    Combine olive oil, lime juice, garlic, 2 tablespoons cilantro, salt and pepper in a bowl.
    Pour over chicken and marinate 1 hour.
    Grill or broil chicken breasts for 2 minutes on each side.
    Remove to platter.
    Sprinkle with remaining cilantro and serve with peppers.
    Yield:
    6 servings.
