Squash Casserole - cooking recipe

Ingredients
    2 lb. squash
    1 carrot, grated
    1 onion, chopped
    1 Tbsp. pimento, chopped (optional)
    1 can cream of chicken soup
    1 pkg. herb stuffing (Pepperidge Farm)
    8 oz. sour cream
    1 stick margarine
Preparation
    Cook, drain and mash squash.
    Mix 1/2 package of the stuffing with all ingredients, reserving 1/2 package for topping.
    Place squash mixture in a casserole (2-quart) dish that has been greased and sprinkle the remaining stuffing mix on top.
    Bake at 375\u00b0 for 25 to 30 minutes.
