Energy Salad - cooking recipe

Ingredients
    3 c. lettuce, broken into bite size pieces
    1 c. spinach, coarsely chopped
    1 small cucumber
    1 medium tomato
    1 to 2 c. sprouts
    red clover lentils
    any raw vegetables (such as carrots, celery, mushrooms, cabbage, beets, radishes)
    1/4 c. olives
    1/2 c. beans
Preparation
    In a large bowl, mix all ingredients.
    Add 1/4 to 1/3 cup Light Dressing.
    Toss well.
    The tomatoes and cucumbers are important because their water content will help digest the more fibrous greens.
    Serves 2 to 3 people.
