Spiced Pork Saute - cooking recipe
Ingredients

3 Tbsp. vegetable oil
2 Tbsp. all-purpose flour
1 tsp. ground cumin
3/4 tsp. each: ground ginger and salt
1/4 tsp. each: paprika and cayenne pepper
1/8 tsp. ground cinnamon
1 lb. pork tenderloin, cut into 1-inch pieces
1 (12 oz.) yam or sweet potato, peeled and halved lengthwise, thinly sliced
1 medium onion, thinly sliced
1 (14 1/2 oz.) can stewed tomatoes (Cajun-style)
1/2 c. dried apricots, julienned
Preparation

In skillet, heat oil over high heat.
On plate, mix flour with seasonings; add pork.
Toss.
