Curried Shrimp Salad(Serves 4) - cooking recipe

Ingredients
    12 oz. tiny shrimp
    1/3 c. mayonnaise (low calorie)
    1 Tbsp. pineapple juice
    1/2 tsp. mild curry powder
    1/8 tsp. crushed pepper (red hot)
    1/2 c. celery, finely diced
    1/4 c. red bell pepper, diced
    1/2 c. pineapple chunks
    salt and pepper to taste
    4 pieces leaf lettuce
    4 pineapple rings (to garnish)
    red bell pepper rings (to garnish)
Preparation
    Thoroughly combine ingredients from shrimp through pineapple chunks.
    Season with salt and pepper to taste.
    Cover and chill until serving time.
