Cholesterol Watchers Cinnamon Oat Bran Muffins - cooking recipe

Ingredients
    1 3/4 c. skim milk
    1 1/2 c. oat bran (uncooked)
    1 egg or 1/4 c. egg substitute
    1/4 c. brown sugar, firmly packed
    1 1/2 tsp. cinnamon
    4 tsp. vegetable oil
    1 c. flour
    2 tsp. baking powder
Preparation
    Combine milk and bran.
    Add egg, brown sugar, cinnamon and oil; mix well.
    Combine flour and baking powder; add to oat bran mixture until moistened.
    Fill muffin cups 2/3 full.
    Bake 20 minutes or until light golden brown at 400\u00b0.
    Makes 1 dozen.
