Green Chile And Chicken Stew - cooking recipe

Ingredients
    1 frying chicken
    6 qts. water
    1 tsp. oregano
    1 bay leaf
    salt and pepper, to taste
    6 med. potatoes, cut into chunks
    1 med. onion, peeled and minced
    2 or more cloves garlic, peeled and minced
    1/2 c. or more chopped green chiles
    8 oz. sliced mushrooms
Preparation
    In a large stockpot, combine chicken, water, oregano, bay leaf, salt and pepper.
    Boil for 10 minutes and then simmer for 45 minutes.
    Remove chicken and let cool until you are able to take meat off bones.
    Discard skin and bones.
    Return chicken meat to pot.
    Add potatoes, onion, garlic, and green chiles.
    Simmer for 20 minutes.
    Add mushrooms and cook another 10 minutes.
    For a shortcut you may use chicken broth and frozen cut-up chicken instead of cooking the chicken, but it is not as good as making it from scratch!
