Ingredients

1 1/2 c. whole wheat flour
1/4 c. brown sugar
1 Tbsp. baking powder
1/2 tsp. cinnamon
3 eggs, separated
2 Tbsp. oil
1 1/2 c. milk
2 small apples, chopped fine
1/2 c. chopped pecans
Preparation

Beat egg whites until stiff.
Combine yolks, oil and milk with dry ingredients.
Stir in apples and nuts.
Fold in egg whites. Cook on hot griddle.
