Eggplant Caviar With Tapenade - cooking recipe

Ingredients
    1 large eggplant
    3 Tbsp. finely chopped onion
    1/3 c. chopped tomato
    1 Tbsp. chopped, fresh basil
    2 Tbsp. chopped fresh parsley
    1/4 tsp. minced garlic
    2 Tbsp. lemon juice
    1/4 tsp. salt
    1/4 tsp. pepper
    Tapenade and toasted French bread slices
Preparation
    Prick eggplant with fork and place on baking sheet.
    Combine eggplant and next 8 ingredients.
    Serve with Tapenade and French bread.
    Yield:
    3 cups.
