Frozen Waldorf Salad - cooking recipe

Ingredients
    1 (8 1/2 oz.) can crushed pineapple
    2 eggs, slightly beaten
    1/2 c. sugar
    1/4 c. lemon juice
    1/8 tsp. salt
    1/2 c. whipping cream, whipped (may use small carton Cool Whip)
    2 1/2 c. diced unpeeled apples
    1/2 c. diced celery
    1/2 c. coarsely chopped walnuts or pecans
Preparation
    Drain pineapple, reserving juice.
    Combine pineapple juice, eggs, sugar, lemon juice and salt; cook over low heat until slightly thickened, stirring constantly.
    Cool.
    Fold remaining ingredients into cooked mixture.
    Spoon into an 8-inch pan. Freeze.
    Cut into squares to serve.
    Yields 8 to 9 servings.
