Christmas Steamed Pecan Cakes - cooking recipe

Ingredients
    3/4 lb. butter
    1 c. white sugar
    6 eggs
    1 tsp. baking powder
    3 oz. lemon extract
    1 lb. brown sugar (light)
    1 lb. flour
    1 lb. pecans
    1 lb. raisins and dates
    pinch of salt
Preparation
    Cream butter and sugar in large mixing bowl; add egg yolks and beat well.
    In separate bowl, combine pecans and raisins and mix in about 1 cup of flour to coat.
    Add baking powder and salt to remaining flour.
    Gradually add flour to creamed sugars, butter and egg mixture, a cup at a time.
    Alternate with lemon extract until all flour and extract have been used.
    Then mix in pecans and raisins; stir well.
    (May take two mixing bowls to mix properly.) Beat egg whites until stiff peaks form.
    Fold into batter mixture.
