Mighty Minestrone - cooking recipe

Ingredients
    3/4 c. dried beans (kidney, pinto or white)
    2 garlic cloves, minced
    2 qt. beef or chicken stock
    1 c. chopped onion
    2 carrots, sliced
    1 medium zucchini, thinly sliced
    1 tsp. each: basil, oregano, marjoram and sage
    1 medium potato, cubed
    1 c. string beans, sliced
    1 celery stalk, chopped
    2 c. shredded cabbage
    2 c. Italian tomatoes, chopped
    4 oz. whole wheat macaroni or noodles
    1/2 c. Parmesan cheese
Preparation
    Soak beans overnight in enough water to cover; drain.
    Add stock, garlic and onion.
    Simmer 1 1/2 hours.
    Add carrots and zucchini; simmer 30 minutes longer.
    Add tomatoes and macaroni; simmer 10 minutes more.
    Serve in bowls or mugs.
    Sprinkle with 1 teaspoon cheese.
