Holland Carrot Bread - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    1 1/2 c. white sugar
    1 1/2 c. cooking oil
    3 whole eggs
    2 tsp. vanilla
    2 c. finely grated raw carrots
    1 c. chopped walnuts or raisins
Preparation
    Sift together flour, baking soda, cinnamon and salt.
    Put in bowl and make a well in center.
    Add sugar, cooking oil, eggs and vanilla.
    Mix with electric mixer until well blended.
    Fold in carrots; don't pack in measuring cup.
    Add nuts or raisins, if desired.
    Turn into well-greased and floured loaf pan.
    Bake in slow oven, 300\u00b0, about 1 1/2 hours.
    Makes 1 large loaf.
    Can be baked in 2 smaller loaves.
