Hobo Soup - cooking recipe
Ingredients

1 1/2 c. lentils
3 pt. vegetable stock
1/2 tsp. salt
3 Tbsp. olive oil
1 large onion
1 1/2 c. tomatoes
2 stalks celery, chopped
1 tsp. lemon juice
2 carrots, diced
1/2 c. fresh broccoli (if available) or 1 pkg. frozen spinach (optional)
1 c. fresh green beans (optional)
1 c. zucchini, sliced (optional)
1/2 c. vermicelli (optional)
Preparation

Wash lentils; add stock and salt.
Cover and simmer on low heat until tender, about 1 hour.
Add other ingredients and cover. Simmer about 20 minutes.
Serves 6.
