Omelet For A Crowd - cooking recipe

Ingredients
    1/2 c. butter
    12 medium potatoes, boiled and sliced
    1 lb. bacon or pork sausage, cooked, drained and crumbled
    8 oz. drained mushrooms
    8 oz. grated Cheddar cheese
    12 eggs, separated
    1/2 tsp. salt
Preparation
    Melt butter in large frying pan.
    Add potatoes.
    Fry until golden brown.
    Spread in 2 (9 x 13-inch ) pans.
    Set aside.
    Stir together mushrooms, cheese, egg yolks and salt; set aside.
    Beat egg whites stiff but not dry.
    Fold cheese mixture into egg whites.
    Layer meat onto potato layer, then pour egg mixture over. Bake 25 to 30 minutes at 350\u00b0.
