Lo-Cal Lemon Cheesecake - cooking recipe
Ingredients

2 c. cottage cheese, pureed in blender
3 Tbsp. lemon juice
2 egg yolks
4 egg whites
1/4 c. Equal sweetener
2 envelopes unflavored gelatin
1 (8 oz.) pkg. Neufchatel cheese, softened
1/2 c. water
1 packet graham crackers
Preparation

Soften gelatin in water; add lemon juice and heat to dissolve gelatin.
Cool slightly; beat in egg yolks, pureed cottage cheese and Neufchatel cheese and Equal.
Beat egg whites until stiff; fold into cheese mixture.
Line bottom of 9 x 13-inch pan with crackers, side by side.
Pour cheese mixture over crackers; chill overnight until firm.
