Orange Chantilly - cooking recipe

Ingredients
    1 c. nonfat plain yogurt
    1 c. fresh orange juice
    1/2 c. heavy cream
Preparation
    Line a strainer with a double layer of cheesecloth.
    Place yogurt in the center; let drain for 1 hour.
    Place orange juice in a small pan; bring to a boil.
    Reduce heat and simmer for about 20 minutes, swirling the pan occasionally, until a very thick syrup remains.
    There should be about 2 tablespoons.
    Reserve.
