Zucchini Relish - cooking recipe

Ingredients
    10 c. zucchini, peeled and ground
    4 c. onions, ground
    5 Tbsp. salt
    2 1/4 c. cider vinegar
    1 Tbsp. nutmeg
    2 Tbsp. cornstarch
    6 c. sugar
    1 Tbsp. turmeric
    1/2 tsp. pepper
    green and red fresh peppers (if desired)
Preparation
    Mix zucchini, onions and salt.
    Let stand overnight. Drain and rinse in cold water. Drain again. Be sure all water is off. Add remaining ingredients.
    Cook 30 minutes. Stir while cooking. Seal in sterilized jars.
