Twice Baked Potatoes - cooking recipe

Ingredients
    8 medium baking potatoes
    2 Tbsp. butter
    1/4 tsp. salt
    1 c. sour cream
    1 c. shredded Cheddar cheese
    2 Tbsp. chopped chives
    pepper to taste
Preparation
    Bake potatoes until done.
    Cut potatoes in half lengthwise. Scoop out insides, leaving a thin shell.
    With electric mixer, mash potatoes with butter, salt, pepper, sour cream and chives. Beat until light and fluffy.
    Spoon into shells and top with cheese.
    Bake in shallow baking dish until cheese melts, approximately 10 minutes at 350\u00b0.
