Cranberry-Orange Nut Bread(1993 Bake-Off Winner) - cooking recipe

Ingredients
    3 oranges
    1 1/2 c. sugar
    1/3 c. water
    1/4 c. margarine
    2 eggs, beaten
    4 c. all-purpose flour
    4 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    cranberries
    1/2 c. chopped pecans
Preparation
    Thinly pare and stack peelings of oranges in small piles.
    Cut slivers to make 3/4 cup.
    Cut oranges in half; squeeze to make 1 1/3 cups juice.
    Set aside.
    Combine sugar, water and orange slivers in small pan.
    Cook over medium heat, stirring until it boils.
    Lower heat; cook for 8 minutes.
    Add margarine; stir until melted.
    Cool slightly, then add reserved orange juice and beaten eggs.
    Mix well.
    Sift together the flour, baking powder, soda and salt.
    Add syrup mixture; stir until blended.
    Stir in nuts and cranberries.
    Pour into 2 greased loaf pans.
    Bake at 325\u00b0 for 45 minutes.
    Cool 10 minutes; remove from pans.
    Cool completely; store in refrigerator.
