Vegetarian Lentils, Pasta And Rice - cooking recipe

Ingredients
    1/4 c. olive oil
    1 large onion, chopped
    2 garlic cloves, minced
    1 c. lentils, rinsed
    1 or 2 (8 oz.) can(s) tomato sauce
    4 c. chicken broth or water
    2 c. cooked elbow macaroni
    2 c. long grain rice, cooked
    salt and pepper to taste
    1 Tbsp. parsley
    2 Tbsp. butter
Preparation
    Saute onion and garlic in oil until onion is tender.
    Add lentils and saute 1 minute.
    Stir in tomato sauce.
    Cook 1 minute to blend flavors.
    Add broth or water.
    Bring to a boil.
    Reduce heat and cover.
    Cook on low heat for 40 minutes until lentils are tender.
    Fold in cooked macaroni, rice, salt and pepper.
    Garnish with parsley and lemon wedges.
    Serves 6 to 8.
