Brown Rice Surprise - cooking recipe

Ingredients
    2 whole chicken breasts, skinned, boned and cut into bite sizes
    2 Tbsp. salad oil
    1 large pepper, cut into strips
    4 oz. cooked ham, cut in 1 inch cubes
    2 Tbsp. chopped parsley
    1/2 tsp. hot pepper sauce
    1 large onion
    28 oz. can whole tomatoes
    1/2 tsp. thyme
    1 1/2 c. long grain brown rice
Preparation
    In 5-quart saucepan over medium heat in hot oil, cook onions and green peppers until tender-crisp, stirring occasionally.
    Add chicken and 1/4 teaspoon salt to onion mixture over high heat; cook until chicken loses its pink color, stirring frequently.
    Add tomatoes with their liquid, ham, parsley, hot sauce, thyme and 1 cup water.
    Heat to boiling.
    Stir in rice; reduce heat to low. Cover and simmer 55 minutes or until rice is tender.
    Makes 6 servings.
