Italian Eggplant - cooking recipe

Ingredients
    1 egg
    1 large eggplant
    1 c. bread crumbs or more as desired
    1/4 c. olive oil
    1 1/2 c. Mozzarella cheese or more as desired
    1 (15 oz.) can spaghetti sauce
Preparation
    Peel eggplant and cut into 1/2-inch slices. Beat egg. Dip in slices coated with bread crumbs, drizzling a little oil on each slice. Line cookie sheet with foil and spray with Pam. Bake slices on cookie sheet and bake in preheated oven at 350\u00b0 until golden brown (approximately 20 minutes). When finished baking, stack slices in shallow dish. Alternate spaghetti sauce and Mozzarella cheese between slices. Then bake until cheese is melted. Enjoy!
