Yellow Squash Pie - cooking recipe
Ingredients

1 1/2 c. cooked squash
1 1/4 c. sugar
4 eggs, separated
1/2 stick butter, melted
1 c. canned evaporated milk
1 tsp. lemon extract
nutmeg (optional)
Preparation

Cook squash in salted water until tender; drain.
Mix squash and sugar.
Add well beaten egg yolks, buttermilk and lemon extract; beat well.
Beat egg whites until stiff.
Fold into squash mixture.
Pour into pie shells.
Sprinkle top with nutmeg. Bake for about 40 minutes at 350\u00b0, or until tests done.
