Sole Provencal - cooking recipe

Ingredients
    1 c. chopped onoin
    1/2 c. diced celery
    1/4 c. oil
    1 (1 lb.) can tomatoes
    2 Tbsp. parsley
    2 bay leaves
    1/4 tsp. salt
    1/4 tsp. pepper
    1 lb. sole fillets
Preparation
    In a large skillet slowly saute onion and celery in oil until tender.
    Add tomatoes (put in blender very briefly), parsley, bay leaves, salt and pepper.
    Cover and simmer gently for 20 minutes. Add sole and continue cooking for 10 to 15 minutes, or until fish flakes easily with fork.
