Cool Rise Bread - cooking recipe

Ingredients
    5 1/2 to 6 1/2 c. flour
    2 pkg. active dry yeast
    2 Tbsp. sugar
    1 Tbsp. salt
    1/4 c. margarine, softened or 2 Tbsp. oil
    2 1/4 c. hot water
    nonstick cooking spray (Pam)
Preparation
    Combine 2 cups flour, undissolved yeast, sugar and salt in large mixing bowl; blend well.
    Add hot water.
    Add margarine or oil.
    Beat with electric mixer at medium speed 2 minutes.
    Add 1 cup of flour.
    Beat at high speed for 1 minute or until thick and elastic.
    Gradually stir in enough of the remaining flour with a wooden spoon to make a soft dough which leaves the side of the bowl.
    Turn dough onto a floured board and knead for 5 to 10 minutes or until dough is smooth and elastic.
    Cover with Saran Wrap, then a towel.
    Let rest for 20 minutes.
