Creole Chicken And Grits - cooking recipe

Ingredients
    1/2 c. plus 3 Tbsp. all-purpose flour, divided
    1/2 c. plus 3 Tbsp. vegetable oil, divided
    1 medium onion, chopped
    1 medium-size green pepper, chopped
    2 gloves garlic, minced
    1 (10 3/4 oz.) can chicken broth (undiluted)
    1 (8 oz.) can tomato sauce
    3 bay leaves
    1 tsp. garlic salt
    1 tsp. ground red pepper
    1 tsp. dried whole oregano
    1 tsp. pepper
    1 tsp. dried whole thyme
    2 lb. boneless skinless chicken breast halves, cut into bite size pieces
    Garlic Cheese Grits (or substitute white rice)
Preparation
    Combine 1/2 cup flour and 1/2 cup oil in Dutch oven.
    Cook over medium-low heat, stirring constantly, 20 to 30 minutes or until roux is caramel-colored.
    Add onion, green pepper and garlic; saute 4 minutes.
    Add chicken broth, tomato sauce and bay leaves.
    Cover and simmer over low heat 20 minutes.
