Jalapeno Rice Dish - cooking recipe

Ingredients
    4 c. cooked long grain rice
    1/2 lb. Monterey Jack cheese
    1 small can jalapeno peppers
    1 pt. sour cream
    1 c. Cheddar cheese, grated
Preparation
    Prepare rice according to package directions for 4 cups cooked rice (shorten cooking time).
    In meantime, slice thinly and cut into finger-length slices the Jack cheese.
    Chop peppers coarsely and add to sour cream.
    Butter large casserole and add 1/3 of rice.
    Next, layer 1/2 of Jack cheese and 1/2 of peppers and sour cream mixture.
    Continue to layer and end with rice.
    Bake in 350\u00b0 oven for 20 minutes.
    Remove and sprinkle with Cheddar cheese. Return to oven for another 15 minutes.
    Serves 8.
