Blueberry Surprise Cake - cooking recipe
Ingredients

2 c. sifted flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt (optional)
1/2 c. butter or regular margarine
2 eggs
1/2 c. milk
1 tsp. vanilla
1 (1 lb. 8 oz.) jar blueberry pie filling
1/4 c. sugar (optional)
Preparation

Combine flour,
1
cup sugar, baking powder and salt in bowl. Cut
in
butter
until mixture is crumbly.
Reserve 1/2 cup.
Beat together eggs, milk and vanilla.
Add to remaining crumb mixture; stir well.
Spread in a greased 13 x 9 x 2-inch cake pan.
Combine blueberry pie filling or any other fruit of your
choice
(see Note
for suggestions) and optional sugar. Spread over
the
top of cake batter.
Sprinkle with reserved 1/2 cup crumbs.
Bake
in 325\u00b0
oven
for 45 minutes or until cake tests done.
Makes 16 servings.
