Swiss Steak - cooking recipe
Ingredients

1/4 c. flour
2 tsp. salt
2 tsp. paprika
1/2 tsp. pepper
1 lb. round steak
2 large onions
1/3 c. shortening
1/2 c. uncooked rice
2 c. canned tomatoes
2 c. hot water
Preparation

Mix flour, salt, pepper and paprika.
Roll steak in seasoned flour.
Brown onions slightly in melted shortening.
Remove onions.
Sear meat on both sides without browning and put in greased casserole.
Place onions, rice and tomatoes on top of meat.
Add remainder of flour mixture to shortening in skillet and blend until smooth.
Add water to mixture, stirring until smooth. Strain over meat in casserole.
Cook, covered, in 350\u00b0 oven for 1 1/2 hours.
