Reuben Sausage - cooking recipe
Ingredients

3 medium potatoes, cooked
1 (16 oz.) can sauerkraut, drained
1 lb. Eckrich smoked sausage, thinly sliced
1/2 c. Thousand Island dressing
2 Tbsp. parsley, chopped
3/4 c. (3 oz.) shredded Swiss cheese
1/2 green pepper, cut into strips (about 1/3 c.)
Preparation

Pare and cube potatoes. Combine sauerkraut, potatoes (2 cups), sausage, dressing and parsley. Spoon into greased 10 x 6 baking dish. Bake at 350\u00b0 for 25 to 30 minutes. Sprinkle cheese and green pepper strips over the top. Bake 5 minutes more.
