Zucchini Torta (Frittata)(Mariapolis Recipe) - cooking recipe

Ingredients
    4 eggs
    3 zucchini
    1 onion, chopped
    1 can tomatoes (14 oz.) or 4 to 5 plump tomatoes that are boiled, peeled and crushed
    Parmesan cheese
    nutmeg, salt, crushed garlic or garlic powder and oregano
    seasoned bread crumbs
    olive oil
    margarine
    crushed red pepper
Preparation
    Cut zucchini lengthwise in 4, then cut in cubes.
    Cut onions in cubes.
    Saute onion and zucchini in olive oil.
    Add crushed garlic or garlic powder, crushed red pepper and pinch of salt. When vegetables are almost cooked (onions are transparent), add bread crumbs and the eggs (beaten with 2 tablespoons of Parmesan cheese).
    Add the tomatoes.
