Baked Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    2 c. bread crumbs
    1 can mushroom soup
    1 medium egg
    1 can peeled tomatoes, drained
    1 tsp. black pepper
    1 Tbsp. dry Ranch dressing mix
    1 small pkg. Velveeta cheese
    1 medium onion, chopped
Preparation
    Peel eggplant; cut in 2-inch cubes.
    Parboil eggplant and onion; drain off excess water.
    Mix together all other ingredients; place in casserole dish.
    Place sliced Velveeta cheese on top.
    Bake for 25 minutes at 375\u00b0.
