Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    3 Tbsp. butter
    1/2 c. grated cheese
    1/2 c. chopped onion
    1 beaten egg
    dash of salt and pepper
    grated cheese
    Pepperidge Farm herb dressing
Preparation
    Boil peeled, cut up eggplant until tender.
    Drain in colander; mash.
    While hot, add butter and 1/2 cup grated cheese plus chopped onion.
    Toss this with beaten egg and dash of salt and pepper.
    Put in shallow baking dish; cover with grated cheese and top with Pepperidge Farm herb dressing.
    Bake at 350\u00b0 for about 20 minutes.
