Louisiana Red Beans And Rice - cooking recipe

Ingredients
    1 lb. kidney beans
    1 ham bone
    2 medium onions, chopped
    1/3 c. green pepper, chopped
    2 bay leaves
    3 cloves garlic, minced
    1/4 tsp. red pepper
    1/2 tsp. black pepper
    salt to taste
    1/2 tsp. Tabasco sauce
    1 lb. smoked sausage, sliced
Preparation
    Wash and pick over beans.
    Cover with cold water and soak overnight.
    Drain.
    Cover beans with 2 to 3 inches of water.
    Add ham bone, onions, bell pepper, bay leaves, garlic, pepper and Tabasco.
    Cook slowly 2 to 3 hours.
    Add salt after beans are tender.
    Beans will make thick gravy.
    Add sausage about 20 to 30 minutes before serving.
    Serve over hot rice.
    Serves 8.
