Mixed Fruit Trifle - cooking recipe

2 c. skim milk, divided
3 Tbsp. sugar
2 eggs, beaten
2 Tbsp. cornstarch
2 tsp. vanilla
16 ladyfingers
2 Tbsp. reduced calorie strawberry jam, melted
2 Tbsp. cream sherry
1 c. halved strawberries
1 c. chopped pineapple
1/2 c. halved seedless green grapes
1/2 c. halved red grapes
1 fresh strawberry, sliced
fresh mint sprig
Preparation

Combine 1 3/4 cups milk, sugar and eggs in medium saucepan. Combine remaining 1/4 cup milk and cornstarch in a small bowl, stirring well. Add to milk mixture.
Cook over medium heat, stirring constantly, until mixture thickens.
Stir in vanilla. Freeze 1 hour or until thoroughly chilled.
