Zucchini Casserole - cooking recipe
Ingredients

1 1/2 zucchini, diced in 1/2-inch pieces (about 8-inches long)
1/2 c. onion, diced
1/2 c. shredded cheese
1/2 c. shredded carrots
1/2 c. sour cream
1/2 can cream of mushroom soup
3 oz. stuffing mix (chicken flavor, dry)
Preparation

Boil the zucchini and onion together for 5 minutes.
Drain. Mix the cheese, carrots, sour cream and soup together.
Put one layer of stuffing mix in the bottom of an 8 x 8-inch greased pan, one layer of zucchini and onion, one layer of cheese, sour cream and soup mix.
Repeat until gone. Top with Parmesan cheese (optional).
Bake at 375\u00b0 for 30 minutes or until lightly brown.
