Lemon Cake Pie - cooking recipe

3 Tbsp. butter
1 c. sugar
2 eggs
1 Tbsp. grated lemon rind
1/4 c. lemon juice
3 Tbsp. flour
1/8 tsp. salt
1 c. milk
1 pie shell
Preparation

Cream butter and sugar; separate eggs and add yolks, one at a time, mixing well after each egg yolk.
Add lemon rind and lemon juice, flour and salt; stir in milk.
Beat egg whites until stiff; fold into the lemon mixture and pour into unbaked pie shell.
Bake at 450\u00b0 for 10 minutes, then reduce to 350\u00b0; bake 35 minutes until done.
