Apple Upside-Down Cake - cooking recipe

Ingredients
    1/4 c. plus 3 Tbsp. butter, divided
    1/2 c. packed brown sugar
    1/2 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    1/4 tsp. ground mace
    3 McIntosh apples, peeled, cored and sliced into thin rings
    2 tsp. lemon juice
    1 1/3 c. cake flour
    3/4 c. sugar
    1 3/4 tsp. baking powder
    1/4 tsp. salt
    1/2 c. milk
    1 tsp. vanilla
    1 egg, separated
Preparation
    Preheat oven to 375\u00b0.
    Melt 1/4 cup butter in an 8-inch square pan.
    Add brown sugar and spices; mix well.
    Arrange apple rings over brown sugar mixture.
    Sprinkle with lemon juice.
    Combine dry ingredients in large bowl.
    Add 3 tablespoons butter and cut to resemble coarse crumbs.
    Add milk and vanilla; beat at low speed until moistened.
    Beat at medium speed for 2 minutes.
    Blend in egg yolk.
    Beat egg white in small bowl until stiff peaks form; fold into batter.
    Pour over apples.
    Bake 35 minutes or until wooden pick inserted in center comes out clean.
    Cool in pan on wire rack for 5 minutes.
    Loosen edges and invert onto serving plate.
    Let stand 1 minute before removing pan.
    Serve warm.
