Creole Potatoes - cooking recipe
Ingredients

2 c. peeled, cubed potatoes
1 green pepper, sliced
1 small onion, chopped
1 c. tomato juice
salt and pepper to taste
Preparation

Simmer potatoes in boiling water for 5 minutes.
Drain and add green pepper, onion and tomato juice.
Simmer 10 minutes longer or until potatoes are tender.
Add salt and pepper to taste while simmering.
Yields 6 servings.
