Arroz Con Pollo(Chicken With Rice) - cooking recipe
Ingredients

1 (3 lb.) frying chicken, cut in pieces
1/2 cup salad oil
1 medium sweet onion, diced
1 medium sweet green pepper, diced
2 tomatoes, diced
1 clove garlic, chopped
1 1/2 cups uncooked rice
4 cups boiling water or chicken broth
1/8 tsp. saffron
1 tsp. salt
Preparation

Shake chicken in seasoned flour, fry in oil till brown.
Cover and cook about 10 minutes longer.
Remove.
Saute onion and pepper in same oil.
Add tomatoes and garlic and cook together to blend seasonings.
Stir in uncooked rice and let cook a few minutes.
Mix all ingredients carefully to blend fully.
Pour boiling water into mixture, add salt and saffron, blend thoroughly and cook about 3 minutes more.
Put in casserole and arrange pieces of fried chicken on top of rice mixture.
Bake uncovered 20-30 minutes at 350\u00b0 until rice is done.
Rice should not be mushy.
