Scalloped Potatoes With Pork Chops - cooking recipe

Ingredients
    6 pork chops (1/2 inch thick approximately)
    2 Tbsp. cooking oil
    3 Tbsp. margarine
    3 Tbsp. flour
    1 1/2 tsp. salt
    1/4 tsp. pepper
    2 c. chicken broth or 1 can Swanson clear chicken broth
    6 c. sliced, pared potatoes
    1 medium onion, sliced
Preparation
    Brown pork chops on both sides in hot oil in a 12-inch skillet.
    Sprinkle with salt and pepper to taste.
    Melt butter in saucepan.
    Stir in flour, 1 1/2 teaspoons of salt and 1/4 teaspoon of pepper.
    Add chicken broth and cook, stirring constantly, until mixture comes to a boil.
    Place potatoes in bottom of an 11 x 7 x 1 1/2-inch baking dish.
    Top with onion.
    Pour chicken broth mixture evenly over top.
    Top with pork chops.
    Cover with foil. Bake in a 350\u00b0 oven for 1 hour.
    Remove foil and continue baking 30 minutes or until meat is tender.
