Ingredients

1 qt. cranberries
2 c. water
2 c. sugar
1 orange rind, grated
juice of 1 orange
Preparation

Cook cranberries in water to boiling and allow to cook for a few minutes or until berries are soft.
Run through sieve.
Return to saucepan and add sugar and grated rind.
Heat again until added sugar is dissolved.
Skim any foam off top.
Add orange juice, remove from heat and allow to cool.
Pour into refrigerator trays and freeze.
When firm, remove from freezer and turn into mixing bowl.
Beat with mixer until fluffy.
Refreeze until ready to serve.
Can serve as an appetizer or along with a meal.
