Chicken Breasts Diane - cooking recipe

4 lg. boneless chicken breast halves (or 8 small)
1/2 tsp. salt (optional)
2 Tbsp. olive/salad oil
3 Tbsp. chopped chives (or green onions)
2 tsp. dijon mustard
1/4 - 1/2 tsp. black pepper
3 Tbsp. chopped parsley
2 Tbsp. butter or margarine
2 Tbsp. brandy or cognac (optional)
juice of 1/2 lemon or lime
1/4 c. chicken broth

Place chicken breast halves between sheets of waxed paper/plastic wrap.
Pound slightly with mallet.
Sprinkle with pepper and salt (optional).
