Toasted Orzo Pilaf - cooking recipe
Ingredients

2 c. orzo ( a rice-shaped pasta)
3 Tbsp. olive or vegetable oil
1/4 c. minced fresh ginger root
1/4 c. chopped shallots or use scallions
1 medium clove garlic, minced
1/2 tsp. nutmeg
3 1/2 c. homemade chicken stock or canned chicken broth
1/2 c. dry sherry or additional chicken broth
1/3 c. dark raisins (optional)
2 Tbsp. butter
salt
Preparation

In a large, dry skillet, over medium-high heat, toast the orzo, stirring constantly, until lightly browned.
Remove from heat; set aside.
