Brisket Of Beef - cooking recipe

Ingredients
    6 lb. beef brisket
    1 1/2 c. sliced onions
    3 c. sliced carrots
    3 c. diced celery with leaves
    4 1/2 tsp. salt
    pepper to please your taste
Preparation
    Cover beef with hot water.
    Add vegetables and simmer, covered, until meat is tender, about 2 1/2 to 3 hours.
    Do not boil.
    Add salt when half done; add more water if it is
    needed. Remove meat from broth, slice and serve.
