Apple Butter - cooking recipe

Ingredients
    1 peck apples
    10 cups sugar
    4 c. water
    2 tsp. ground cloves
    2 Tbsp. ground cinnamon
    1 tsp. ground allspice
Preparation
    Wash, quarter, core and cook apples, unpeeled, with water. Cover and simmer slowly until tender.
    Rub through coarse sieve. There should be about 5 quarts pulp.
    Add half as much sugar as pulp and spices.
    Let simmer about 2 hours, stirring frequently. Keep a good eye on it.
    It will burn easily.
    When thick, pour into hot sterilized jars and seal at once.
    Remember apple butter becomes stiffer when cold.
    Makes 9 to 10 pints.
